Cozy Lentil & Quinoa Chili Recipe
Prep Time: 10 minutes
Serves: 4
Cooking Time: 40 minutes
Ingredients
2 tbsp avocado oil
3 cloves garlic, minced
1 small white onion, chopped
1 16 oz. can tomatoes
4 cups vegetable broth
1 cup quinoa, dry (rinsed)
2 cups green lentils, dry
2 cups spinach, chopped
1/2 tsp cumin
1/2 tsp curry powder
1/2 tsp paprika
4 tsp chili powder
Sea salt & black pepper, to taste
Cilantro leaves (for garnish)
Directions
Over medium-high heat, heat the avocado oil in a large pot. Add minced garlic and cook until golden brown, stirring frequently. Add onion and cook until translucent, approximately 3-4 minutes.
Add tomatoes, spices, and vegetable broth to the pot. Bring everything to a simmer for about 10 minutes.
Add lentils and quinoa; bring to a boil. Reduce to a simmer and leave covered for 30 minutes or until lentils are tender and the quinoa is cooked.
Top with cilantro (optional) and savor the deliciousness!
